Trying a New Supplier

If it looks this good going into the cure, just imagine how it’ll look after a week!

This latest batch is made with pork belly I got from a potential new supplier. These new bellies are larger and pass through far fewer middle-men than with my current supplier, so in my mind it’s better quality…it feels as though the belly came right from the farm/processor. I’m thinking the end result should be even tastier than previous batches, so I’ll keep you posted!
